Gluten Free Donut Pancakes

Now, a few things before we get to these…

I feel like I have been posting quite a few pancake recipes lately? We don’t eat pancakes everyday, they’re our special occasion and weekend breakfast, and it just so happens we’ve been celebrating a little extra lately, maybe?  I don’t know, but if you don’t love pancakes, I’m not sure we can be friends. 😉

Also… This recipe is gluten and dairy free because baby Vinnie is gluten and dairy free, you can easily make these with a boxed mix or your own homemade recipe! This is actually a twist on this recipe (because I wanted fluffier pancakes!) Keep scrolling for the recipe!

Here’s what you need…

For the glaze

Here’s what you do…

  1. Preheat griddle, or skillet.
  2. Combine dry ingredients (flour, baking powder, salt, sugar) in one bowl.
  3. Combine wet ingredients (egg, applesauce, milk) in another bowl. 
  4. Add wet ingredients slowly to dry ingredients.
  5. Pour pancakes (as you normally would) and let cook for 1-2 minutes until bubbles form. Flip and cook an additional minute.
  6. Using a round cookie cutter, cut out “donut hole” from the center. (I have a fun way to use these, here!)

To make the glaze…

This is all about personal preference, I recommend starting with 1/2 cup powdered sugar and slowly adding milk of your choice to reach desired consistency. HOWEVER – I was out of powdered sugar so what I actually did here was a little different. I put equal parts granulated sugar and water, simmered over medium heat until it reduced and then added a bit of maple syrup to get the “maple glazey” look. These will be more like donuts with the powdered sugar glaze!

Notes: I don’t even want to admit that it took me 4 or 5 tries to realize that cooking them like regular pancakes and cutting out the middle was the easiest way to get the donut look. I tried too many methods. Just go with my recommendation here, I’m telling you!

Overall, they turned out amazing! Kids loved them and they’re super cute. I think they would have looked more “donut-y” if I had powdered sugar on hand, buuuuut, poor planning on my part. Either way, they taste great and are nice and fluffy!
