Earth Day Lunchbox Ideas

Earth Day is this Friday, April 22nd and even though my kiddos are on spring break, I thought it would be fun to put together some lunch ideas! I love that Earth Day gives me an opportunity to talk about a serious topic – on a lighter note – and in a fun way! I decided to make two different lunches with similar themes, here they are:

Earth Day lunch number one! This one is supposed to look like a tree, my kids figured it out so I hope you did too! This kiddo has turkey and lettuce in spinach rollups with pretzel sticks, grapes, “ants on a log” (celery, peanut butter and figs),  chocolate covered raisins and a lady bug in a bed of cucumbers. To make the ladybug we used cherry tomatoes and chopped figs, but you can be creative – use olives or raisins if your kids prefer those!

Earth Day lunch number two! This kiddo is having ladybug sandwiches. These are the same ladybugs as above, but layered from top to bottom: bread, turkey, lettuce, cucumber and ladybug. He’s also got pickles, grapes, cukes, more ants on a log and a feeble attempt at a melon ball sunshine. You win some, you lose some! 😉

My goal for these lunches was to create talking points. Since my boys are home, we can chat over lunch and talk about the Earth, the small things like bugs and ants and bigger things like sunshine and trees. My goal with fun food and lunches is not to impress anyone except my kids, it’s about making good choices and having fun while doing it!
