Summer Berry Pudding Parfaits

Can we talk about how amazing the weather has been? I’m loving that the warmer days have finally settled in, and thought it was only necessary that we throw a pudding parfait snack party in our backyard to celebrate! 

We celebrated our tenth wedding anniversary last summer with a backyard vow renewal (see it here) and we’ve had this wooden electrical spool that we used as our cake table, and it’s hanging around ever since. The spool is actually perfect for laying snacks out on summer days when the kids are playing outside, so I thought I’d surprise the boys with a fun little snack station – something we haven’t done outside since last summer!

How adorable is that? You know I don’t need a reason to celebrate. It only took me a few minutes to pull together some ingredients to get this setup while the boys were playing out front, and Vinnie was napping. I’m going to share a quick tutorial for you on how to build pudding parfaits, because they are super simple!

I’m always looking for a better-for-you option when it comes to celebrating with snacks, which is why I was so happy to see these new Snack Pack Naturals at Walmart. They don’t have any corn syrup, artificial sweeteners or anything artificial for that matter! I love that they only contain a few ingredients – like real milk and sugar. When you visit Walmart to grab a pack, you’ll be able to find them in the baking aisle with the cake mixes and nuts, they have a little pop out display:

Ready to make some parfaits? Here’s what you need…

  • New Snack Pack Naturals chocolate or vanilla, choose your favorite (or both like we did!)
  • Fruit and berries of your choice. We used strawberries, blueberries and bananas for this recipe, but don’t be afraid to mix it up. I laid out some peaches and whipped topping too, because I knew the boys would want to make more than one!
  • Graham crackers or another crunchy topping of your choice, chopped nuts or granola would be good too!

You don’t have to use clear glasses when making parfaits, but it makes it that much more fun (and pretty) when you do! I pulled out these adorable vintage mini glass mugs I had and used those. Some other fun ideas for clear containers would be stemless wine glasses, mason jars, or even mini mason jars! If you’re out and about or taking this to a friends house, you could use clear plastic disposable cups too.

So cute right? My mom actually picked the glasses up for me at a yard sale, they’re the perfect size for a kid-friendly snack.

Assembling these parfaits couldn’t get much easier. I made a couple for Mr. Kirk and I, then let the boys make their own. To start, you want to scoop about 1/3 of the pudding into the bottom of your glass:

Next, add your first layer of fruit or berries:

Then repeat those two steps, one more layer of pudding, and one more layer of fruit, finally, add the last 1/3 of the pudding on top:

Last, top with fruit and crushed graham crackers as a fun little garnish!

Then you have a fun little layered treat:

So to recap:

  1. Spoon 1/3 of the pudding cup into a glass of your choice
  2. Add a handful of blueberries, chopped strawberries or sliced bananas as a second layer
  3. Cover fruit with another 1/3 pudding
  4. Add another handful of fruit
  5. Top with last 1/3 of pudding
  6. Garnish with crushed graham crackers and fruit
  7. Enjoy!

Adorable food doesn’t have to equal excessive effort. I love letting the kids participate in activities like this so they can learn how to build their own fun food, but more so because I love making memories. You know how much I love to celebrate with food – and that probably means I have more “celebration” materials on hand than the average person. I have picked up many fun finds through the years for a few dollars here and there, so don’t feel as though you need to run out and purchase special party ware to have a backyard snack party, you don’t! 

Kids don’t care half as much about your tablescape as they do about what kind of snacks you have…

    First, you had me at “Summer.” Second, this is incredibly easy and something I will be trying this weekend with our deck party. You think this would work with smaller glasses? I would almost like to take this and tweak it for shot glasses but not sure how. Something with a sweet punch! You’ve got me thinkin. And made me hungry 🙂
